Our brewing process starts with sourcing the highest quality and in-season ingredients for our beers. Head Brewer, Mark Musso, is always inspired by the Finger Lake's region and its ever-changing seasons.  Utilizing what our local region has to offer not only allows us to create inventive beers but truly unique beers found only in our area.

This connection to local ingredients may come by using local, fresh fruits, vegetables and even herbs or spices. We also regularly take advantage of being in one of the worlds greatest wine regions by using local grapes or spent wine barrels to put a unique local spin on our beers.

Mark keeps a close eye on larger beer trends and the tastes of consumers without compromising on quality, creativity, and flavor. Stop by the tasting room to try one of Mark's inventive brews - the handles are always rotating and a pleasant surprise is always in store.
